Italian Sunday with Silvana de Soissons
We are thrilled to present Silvana de Soissons to teach our Italian Sunday Pasta Course and show us how to make authentic fresh pasta, traditional pasta dishes and a Sicilian dessert. Silvana is an Italian cook and food writer. Born into a very foodie Lombard family, growing fresh food, sourcing good ingredients and preparing delicious meals has been at the heart of her everyday life and work ever since childhood.
This year she launched the successful Foodie Bugle, an online co-operative food and drink magazine that tells the whole story of good food and drink (www.thefoodiebugle.com). She will demonstrate how to make fresh egg pasta and its shapes: tagliatelle, tagliolini, pappardelle, ravioli and farfalle.
Everyone will participate in the making and rolling. She will show us how to make Ravioli filled with cavolo nero, ricotta and nutmeg, Tagliolini served with a butternut squash and nutmeg puree, Thyme and lemon focaccia, Pasta e fagioli – a Venetian pasta and cannellini bean stew with rosemary and passat, Torta di mandorle con le mele – An almond cake from Sicily, which is served with apples baked with vanilla, honey, cinnamon and raisins.The course will be a mixture of demonstration and hands on. We will finish with a late Italian Sunday lunch with organic Italian wine.
